Cold Yellow Summer Squash Soup
Description:
Cold and refreshing soup. Ingredients: 6 to 8 medium-sized yellow squash (no need to peel if they are fresh and not too big). 6 cups chicken broth - can use boullion. 2/3 cup lemon juice 1 onion chopped 1 tbsp. fresh dill 1 tsp. fresh basil salt to taste (I use seasoned salt) pepper to taste 3/4 sour cream Directions: Slice squash in 3/4 inch rings. Boil squash in broth to which has been added the spices, lemon juice, salt and pepper. Boil til squash is tender approx. 15 mins. Cool to lukewarm. Add sour cream. Place in blender and blend on high for about a min. Will have to do small amount at a time. Refrigerate until chilled through. Recipe Summary: Yield: 8-10 servings Prep Time: 30 mins.
