Lemon Poppyseed Muffins

Description:
Make a dozen standard size or 6 jumbo muffins.

Ingredients:
2 cups self-rising flour
1/4 teaspoon salt
1 1/2 tablespoons poppyseeds
3/4 cup granulated white sugar
2 eggs
1/2 cup milk
1/2 cup butter at roop temperature
1 1/2 tsp. vanilla extract
Grated zest of one lemon
Sugar for topping (raw or superfine)

Directions:
Grease or line muffin cuips
Sioft flour and salt
Stir in poppyseeds and sugar
Make a well in the center
Combine eggs, milk, butter, vanilla and lemon zest
Add all at once to the flour mixture and stir until just moistened (batter should be lumpy)
Spoon battter into muffin cups, filling 2/3 full
Sprinkle with sugar
Bake until golden brown and until they test done
Colol in pan 5 minutes
