Winter is big on food experiences because of limitations in some activities. If you aren’t going to offer cooking classes, arrange something at your local restaurants or just interview a local chef on what’s reflective of their specials and how they or the town does regional cuisine and what is regional.

it’s remarkable how many people buy in the first part of January – through the years we’ve found this true for our iLoveInns gift cards. They are in a buying mode and are also planning the year and want to sturcture their travel so they actually do it. Feature yours.


Remind Guests of How Long Your Gift Certificates Are Good For

The Wisconsin association recently reminded their guest list that gift cards are good for five years. Here in California they have no date limit. It’s a good reason for guests to invest in your certificates.


Create a Planning Retreat

Remind guests of the value of pulling away and actually planning your life instead of letting it happen. Make Deals With Wedding Photographers

Whenever there’s any kind of wedding and a Wedding Photographer, make a deal with the photographer so you can get photos to use all year round for your newsletter. Offer to give him/her an extra $400 for photos you can use – so for instance if he’s framing a shot by the gate for the wedding couple, also shoot a shot without the couple. Or get a cute looking guest to be a model for a free night stay and get shots with her, him, them. Be sure to get a photo release from any guest you want to use. The photographer might want to come the day before or another time to do this but you will save tons of $ and get photos that will have enough pixels to look good in your advertising. Try for 70 good shots.

Show & Tell Your Animals

Babies are popping out everywhere; kits, fawns, owlet’s,…
Mama fox gave birth to three adorable kits (baby foxes) in the drain pipe of our little pool. They were too close to human activity. On a Saturday the babies came out for the first time and hung by the hole in the sun, guest were like paparazzi. So we roped the area off to keep guest away. But babies were not as sacred on Sunday and started to wander, thinking the front steps of the lodge were a good place to hang. We are fine having them on the land but, for their safety and the guests, we needed to relocate them. We talked to Sonoma County Wildlife Rescue Monday morning and they said the best way was to haze them, making them uncomfortable so mom would move them. So that was the plan. Then we were to put out flour to see if there were any prints to make sure they were gone. We guess the kits talked to their mom Sunday night before we started this process. Kits – ‘Mom those humans out there are taking our picture and making cute sounds at us. They are so nice’. Mom – ‘WHAT!!! We’re out of here’. She moved them to another drain pipe down by the conference room for a few days, but with a little hazing, they are now safely somewhere in the canyon.

2 Cups of Honeysuckle for Honeysuckle Ice Cream

Honeysuckle Ice Cream

Yield: makes about 1 pint

WHAT YOU WILL NEED

  • 1 1/2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup sugar
  • 2 cups honeysuckle blossoms (this is approximate)
  • seeds from 1 vanilla bean

INSTRUCTIONS
Put the cream, milk and sugar into a medium saucepan and stir to dissolve the sugar. Add the honeysuckle blossoms into the pan and and bring the mixture to a simmer over medium heat, stirring occasionally. Turn off the heat and let the mixture come to room temperature. Then cover and refrigerate overnight. In the morning, strain the blossoms out and add the vanilla bean seeds. Mix well to break apart any clumped seeds. Process the cold mixture in your ice cream machine according to its directions. Put the soft ice cream in the freezer to firm up before serving.

Lilac and Blackberry Pavlovas

Adapted from Cooking with Flowers. Serves 4-6.
Note: How to select and clean lilacs (adapted from Cooking with Flowers) – Never use any flowers that have been sprayed and never use flowers on the side of the road. Cut lilac bunches from a bush to be used. Wash each bunch and separate the flowers into smaller clusters. One cup of lilacs will contain 40 to 60 individual blossoms. A single lilac bunch will likely yield between 1/2 and 1 cup of blossoms.

For the lilac-blackberry syrup:

  • 2 c. water
  • 3 c. lilac blossoms (see headnote)
  • 1/2 c. sugar
  • 8-10 fresh blackberries

Bring water to a boil. Place blossoms in a bowl and pour boiling water over them. Let stand for at least 2 hours and up to 24 hours. Add the flowers, flower water, sugar, and blackberries to a medium saucepan. Bring to a boil over medium-high heat. Boil for 6-8 minutes, stirring and squishing blackberries with the back of a wooden spoon. Remove from heat and strain into a glass container. Discard the solids.

For the lilac pavlovas:

  • 1/2 c. lilac blossoms (see headnote)
  • 1 c. sugar
  • 2 TBS cornstarch
  • 4 egg whites
  • 1/4 tsp cream of tartar
  • 1/2 tsp lemon juice

Preheat the oven to 210°F. Line a large baking sheet with parchment paper and set aside. Place the lilac blossoms and the sugar in a food processor and blend until pulverized. Mix 2 TBS of the lilac sugar with the cornstarch in a small bowl. Set the rest aside. In a clean bowl, beat the egg whites on high until foamy. Sprinkle with the cream of tartar, then beat continually on high, gradually adding 1 cup of the remaining lilac sugar as you go. (You may have leftover lilac sugar – store it in a glass jar with a lid). Beat until the egg whites are stiff, shiny, and hold firm peaks. Fold cornstarch mixture and lemon juice into the whipped egg whites. Use a large spoon to dollop the egg whites into 3-inch rounds on the lined baking sheet, then use the back of the spoon to scoop out a small indentation in each pavlova. Bake for 1 hour, or until they feel dry to the touch. Turn off the oven and leave the pavlovas in there for another hour with the door closed.

To serve:

  • 12 small lilac pavlovas
  • 2 c. of freshly whipped sweetened whipped cream
  • 6-8 blackberries per person
  • 1 c. lilac-blackberry syrup
  • candied lilacs (optional)

Place 2 pavlovas on each plate. Top each with a dollop of whipped cream and a few blackberries. Drizzle with lilac-blackberry syrup and top with candied lilacs.

Famous Huntington Beach and others …

Out-of-state visitors wanting to follow in the footsteps of their favorite actors from Baywatch and The O.C. Over the years, beach cities up and down the coast installed permanent fire rings for ease and safety. These fire rings have become part of our national pop culture. Think Gidget and Moondoggie. Think Annette and Frankie. And now think if those fire rings were banned–because that’s almost what happened, until a fateful decision this month.

According to KABC-TV, the move to ban Southern California’s beach fire pits started in the uber-wealthy Corona Del Mar section of Orange County’s Newport Beach, whose residents complained that woodsmoke from bonfires was harming their health. The California Coastal Commission denied Newport’s subsequent plan to remove the rings, and the matter ended up with the South Coast Air Quality Management District (AQMD). The plan under consideration by then had grown out of all proportion: to ban fire pits on every California beach from Malibu in the north to San Clemente in the south–100 miles of popular oceanfront.

One of the beach towns most impacted by the proposed ban would have been Huntington Beach, the surfing capital that bills itself officially as Surf City USA. With three beaches (Bolsa Chica State Beach, Huntington City Beach, and Huntington State Beach) stretching for 10 miles, Huntington has 530 fire rings. “These bonfires are a deeply rooted tradition in Huntington Beach,” said Mayor Connie Boardma

We’re always looking forward to the next exciting thing in Fredericksburg- and grape harvest is just around the corner! Grape Stomps and harvest celebrations take place here in the Texas Hill Country each August and September- and take us right into the Fall Festival season.

Stomping grapes is an age-old tradition dating back to the ancient Romans, but nowadays we use mechanical presses and just stomp for fun! Grape stomp festivities are a blast for the whole family- kids can squish grapes between their toes and turn their feet (temporarily) purple at the Pedernales Grape Stomp, adults can sip Texas wines during the Harvest Festival at Messina Hof Hill Country, and both the young and young at heart can channel their inner Lucille Ball during the “Lucy and The Italian Woman” costume contest at Becker Vineyards.
