Altavista Baked Oatmeal

Description: Heavenly, warm and healthy baked oatmeal dish and just what the doctor ordered. This morning treat is so good, guests often ask for left-overs and demand the recipe. Ingredients: 2 1/2 half cups whole rolled oats 1/4 cup oat bran or use wheat germ 1/4 cup steel-cut oats or use flax seed meal 1 teaspoon salt or just a pinch 1-2 teaspoons cinnamon 2 teaspoons baking powder 2 fresh eggs beaten 2 cups milk, or use soy milk vanilla flavor 1/3 cup no sugar applesauce 1 tablespoon vanilla Fresh fruit 2 cups Crushed pecans Coconut flakes Directions: Preheat oven to 400 degrees. Grease a 2-quart baking dish. In separate bowls combine dry and wet materials and then put them together like making muffins, don't over mix. Cook uncovered at 400 degrees for 20 minutes then pull out and add 2 cups of fresh fruit. Peaches, raisins, dried fruit especially cherries work well. Strawberry or raspberry compote also works well. Add unsweetened coconut flakes to the top along with crushed pecans. If you have a sweet tooth, add a small amount of maple sugar, raw honey or a dried Yam product called "Yammits".
