Baked Apple Oatmeal

Description: The absolute favorite breakfast first course at Selah Inn, this dish is easy to prepare ahead of time and bake up 45 minutes prior to serving. It's chewy, warm, sweet and good for you! Ingredients: 2/3 cup sugar 1/2 cup oil 2 beaten eggs 3 cups buttermilk 3 cups old-fashioned oatmeal 2 tsp. baking powder 1 tsp. salt 1 1/2 cups peeled, sliced baking apples 1/2 cup dried cranberries Directions: Preheat oven to 350 F. Grease 8 inch square baking pan. Combine oil, sugar, and eggs. Add the buttermilk, oatmeal, baking powder, salt, apples and cranberries; mix well. Pour mixture into baking dish and bake until firm in the middle, about 40 minutes. Serve with milk, half & half, or whipped cream.
