Baked Bananas

I discovered this easy breakfast fruit for the winter and now I wonder why I haven't had it more often - it is so easy Being exact is not absolutely necessary you can make 3 or 6 or 10, adjust ingredients accordingly This recipe is for 6 servings Ingredients: 1/3 C butter melted, 3Tbs fresh lemon juice, 6 firm ripe bananas, peeled, 1 tsp cinnamon or ground ginger, 1 C grated coconut, 1/3 C brown sugar Directions: Preheat oven to 350 degrees F, Spread the melted butter and lemon juice over the bottom of a shallow baking dish that will hold 6 bananas. Stir the butter and lemon juice together until blended. Put the bananas in the dish and turn them until they are well coated with the butter mixture. Put the sugar and cinnamon or ginger in a small bowl and stir with a fork to blend thoroughly. Sprinkle the sugar mixture evenly over the bananas. Bake the bananas for 18 - 20 minutes or until the butter bubbles a little. Turn them over once after 10 minutes of baking. Sprinkle coconut over the bananas about 5 minutes before they finish cooking. Serve warm with a little cream or maple syrup.
