Baked Oatmeal

Every time that we serve this baked oatmeal our guests have loved it! It's also fun to use different fruit and nuts. Such as blueberries & almonds, apples (peeled & shredded) and walnuts, sour cherries (chopped) & pecans, etc.

2 eggs
1/2 cup unrefined coconut oil
3/4 cup packed brown sugar
1 teaspoon salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 cup coconut milk
1 teaspoon vanilla extract
3 cups old fashioned oatmeal
1 cup chopped peaches (about 2, peeled)
1 cup sliced almonds

Preheat oven to 350 degrees. Beat eggs in a large bowl. Add coconut oil, brown sugar, salt, baking powder, cinnamon, coconut milk & vanilla extract. Mix well. Add oatmeal, peaches and almonds. Mix well and pour into a greased 9 x 13 baking dish. Bake for approximately 30 minutes or until golden and set. Enjoy!
