Baked Oatmeal
Description:
A fabulous oatmeal baked and loaded with good for you ingredients. It always gets rave reviews and requests for the recipe. This was suggested to me by a gentleman from Pakistan and he said his wife "Americanized" it. Ingredients: 4 eggs 1/2 cup canola or vegetable oil 2 cups milk 4 cups "old fashioned" or "irish" oatmeal 1 T Baking Powder 1 tsp. salt 1/2 cup Flax Seed...from your health food store 1/2 cup Sunflower Seeds 1/2 cup dried cherries, raisins or cranberries 1/2 cup almonds Directions: Oil, butter or spray a quart & a half ceramic bowl or loaf pans. To mix, in medium bowl, wire whisk the eggs, add oil, honey & milk. In another bowl mix oatmeal, baking powder, salt, flax seed, cherries & almonds. Add dry ingredients to wet ingredients and bake in above greased bowls or pans at 350 degrees for 45 to 60 minutes depending on pan or bowl used. The loaf pans can be used like a loaf of bread and sliced and served.
