Baked Peach Pancake

Description: Extra special breakfast treat - great served with sausage links Ingredients: 4 eggs 1 1/2 cups milk 1/2 t. salt 1/4 cup sugar 2 T. canola oil 1 1/2 cups all purpose flour 1/2 cup sugar mixed with 1 T. cinnamon and 1 t. ground ginger 1 bag of frozen sliced peaches, thawed 1/4 cup brown sugar 4 T. butter Maple syrup - optional Directions: Beat eggs until thick, then add milk, salt, sugar and oil. Sift in flour and beat wellto mix. Let batter stand for 30 minutes. Preheat oven to 375 degrees. Buttertwo 9 inch pie pans or you can use one very large shallow round baking dish. Sprinkle some of the cinnamon, ginger, sugar mixture on the bottom of the dish. Arrange peach slices in pan(s) and sprinkle with remaining sugar mixture and brown sugar. Dot with butter. Pour batter over peaches, dividing evenly between pans if you are using two. Bake 30 to 35 minutes or until top is golden and set. Cut into wedges and serve hot with warm syrup, if desired.
