Description:
Delicious with coffee, butter or honey. In the colder months, try it toasted. Ingredients: 1 teaspoon lemon juice 2/3 cup milk 1/2 cup butter, softened 1 cup sugar 2 eggs, lightly beaten 3 overripe bananas, mashed 2 cups white wheat flour 1 teaspoon baking soda 1/2 teaspoon salt Directions: Preheat the oven to 350 degreesF. Grease your baking tin. Add the lemon juice to the milk, stir and set aside. (It will curdle. This is good.) Cream together butter and sugar. If you're unsure how long this takes, keep going just a little longer than you think. Add eggs and bananas to the creamed butter and sugar. Mix. Add half the flour (1 cup), baking soda, and salt. Mix. Add the milk & lemon juice from the beginning. Mix. Add the rest of the flour (1 cup) and stir until blended. Do not over-mix. Pour finished mixture into greased pan. Bake until edges are golden brown and a toothpick comes out clean. Use the cooking times listed below as a guideline; remember that the bread continues to cook after removing it from the oven. For a single loaf pan, bake 60-70 minutes. For three mini loaves, bake 40 minutes. For muffins, bake 18 minutes.
