Best Banana Muffins

2 cups flour
1/2 tsp. baking powder
3/4 tsp. baking soda
3 ripe bananas
1/4 cup sour cream
1 stick butter
1 cup sugar
1 tsp. vanilla extract
2 eggs
1/2 cup chopped pecans
2 tsp. raw sugar

Preheat oven to 350oF. Line 16 - 18 muffin tins with paper liners or spray with cooking spray.
In the small bowl, sift together dry ingredients. Set aside. In bowl of a food processor, mix together bananas and sour cream until smooth.
In the bowl of an electric mixer, beat butter, sugar and vanilla extract until light and fluffy. Add eggs, one at a time and mix until well blended. Add in dry ingredients alternating with banana mixture. Beat until just blended. Fold in nuts.
Spoon mixture into prepared muffin pans. Sprinkle tops with raw sugar. Bake for 20 - 25 minutes.
