Description: Quick, easy, delightfully Italian dish - good for breakfast, brunch or lunch. Ingredients: For 2 birds in 2 nests: 1 tbs butter, 2 tbs olive oil, 2 thick slices of crusty Italian bread, 2 cloves chopped garlic, 1 big chopped roasted pepper, 2 eggs, 1/2 c chopped parsley, 1/2 cup grated parmesan cheese, 1 cup marinara sauce Directions: Cut a whole in the middle of the bread slices (use a glass as a guide if you'd like), heat a nonstick skillet with the butter and oil, add garlic & cook 1 minute. Remove garlic. Add bread slices to skillet & toast for 1-2 minutes until golden. Flip the toast and add roasted peppers to the holes, pushing them down a little bit. Crack one egg into each of the holes, top eggs with the sauteed garlic (if you'd like), Parmesan cheese, parsley and marinara sauce. Cover skillet until the eggs are cooked to desired doneness. Enjoy!
