Bluberry Cake At The Guest HouseDescription: One of my favorite cake recipe! Ingredients: 2 cups all purpose flour, sifted 1 cup granulated sugar 3 tsp baking powder 2 tsp vanilla 1/2 cup buttermilk 2 eggs 1/2 cup vegetable oil 1 pt blue berries Confectioners sugar (for dusting top of cake) Directions: Preheat oven to 350 degrees F. Butter and flour a 9″ round cake pan. Sift the dry ingredients into a large bowl, toss blueberries in flour mixture to prevent from sinking to the bottom of the cake. In medium bowl, whisk eggs then add vanilla and oil until mixture is completely blended. Mix wet and dry ingredients until just combined, do not over mix. Be careful with the blueberries when combining the dry and wet ingredients. Pour mixture into the prepared cake pan. Bake for 35-40 minutes, depending on your over. Cake is done when a toothpick comes out clean when inserted into the cake. Allow cake to cool in pan for 10 minutes before gently removing from pan and placing on a wire rack to cool completely.
