Blueberry Minnins

The scent of these muffins call our guests to breakfast!

Ingredients:
Yield: 1 Dozen

Ingredients:

2 eggs
1 cup sugar 1/2 cup canola oil
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sour cream
1 1/2 cups blueberries

Streusel Topping:
1/3 cup brown sugar
1/4 cup flour
2 tablespoons butter, melted

Directions:
In a large bowl beat eggs with electric mixer. Gradually add sugar, pour in oil and vanilla while still beating until blended. In a separate bowl mix flour, baking powder, salt and baking soda. Add flour mixture to egg mixture alternately with the sour cream. Fold blueberries in gently. Line muffin tins with paper muffin cups. Spoon batter in to each cup to top. Top with streusel.

Bake in a preheated oven at 375 degrees for 20 to 25 minutes.
