Cardamom Tea Cookies
Description:
Light melt-in-your-mouth cookies that have a great sugar glow and just right size to serve with tea. Ingredients: 1 Cup Butter 1 egg yolk 2/3 cup sugar 1/2 teaspoon ground cardamom 1/4 teaspoon baking soda 1/4 teaspoon salt 2 cups flour 1/2 cup sugar Directions: Allow butter and egg yolk to stand at room temperature for 30 minutes. Beat the butter for 30 seconds, add the 2/3 c. sugar and beat for 5 minutes or until light and fluffy. Add the egg yolk, cardamon, baking soda, and salt. Mix until combined. Beat in flour just until blended. Place in plastic wrap and chill for 1 hour. Shape dough into 3/4 inch balls or use large end of melon baller to shape cookies. Place two inches apart on ungreased baking sheet. Bake in a 350 degree oven for 10 minutes or until edges are slightly browned. Remove from oven and cool on cookie sheets for 1 minute. Transfer to wire rack and cool completely. Carefully roll cookies in remaining sugar covering all sides. Store in an airtight container for up to three days or freeze.
