Chef Victoria's Strawberry Cream Scones

This delicious recipe is a guest favourite. The recipe makes 16 scones or 2 rounds. Enjoy!

In a large mixing bowl, place
4 cups flour -I like to use 1/2 white, 1/2 whole-wheat
2 teaspoons salt
1-1/2 Tablespoons baking powder
1/4 cup sugar

whisk together dry ingredients, stir in:
1 Cup finely chopped fresh strawberries/
or whatever your heart desires - sweet or savoury

Stir in:
1/2 litre (2 cups) whipping cream

Mix together with wooden spoon, till a shaggy mass, not too dry, not too wet!
Shape into 2 soft dough balls, dust with surface with flour.
kneading lightly. Shape into 6" diameter round.
Brush with a little leftover cream,
cut into 8 pieces each, place on parchment paper baking pan, & bake at 375 degrees, for 10 minutes, turn for 5-10 more, serve warm with fresh butter. Enjoy!
