Cherry St. Collard Salad

A wonderful fusion of Old South and Mysterious East this quick salad is delicious with almost any main course.

six large collard leaves
1/4 cup dried cranberries
one carrot
toasted sesame oil
rice wine vinegar
salt & pepper

Wash the collard leaves thoroughly. Roll them cigar style and then julienne them ( cut them in tiny strips). In a bowl add 1/4 cu vinegar and four tablespoons sesame oil. Grate the carrot into the bowl, add the collards and the dried cranberries. Salt and pepper to taste.
