Corn Quiche

This crust-less quiche is a staff and guest favorite! It has a great custardy texture.

5 eggs
scant 1/4 cup chopped onion
1 tablespoon sugar
1 teaspoon salt
3 tablespoons melted butter
1 and 1/3 cups light cream
2 cups frozen corn kernels

Spray a 9 inch pie pan with non-stick spray. Preheat oven to 350 degrees. In a blender combine eggs, onion, sugar and salt. Blend until smooth. Add butter and cream and blend; add corn and pulse briefly. Pour into prepared pan. Bake until just set and starting to brown, about 30 minutes.
