Cottage Cheese Pancakes

These pancakes are delicious and protien packed. Very little flour so the carb content is minimal. Really good with fresh fruit and so moist that syrup isn't necessary.

1 1/2 cups Cottage Cheese
6 Eggs
1/2 cup Flour
1 tsp Vanilla
1 TBS Sugar
1/2 tsp Salt

Mix all ingredients together and cook on a hot, well greased griddle.
