Description: Elegant but simple, this dish celebrates the Chesapeake Bay's blue crab. Ingredients: 1/2 cup butter 4 egg yolks 1/2 cup whipping cream 3 TBL lemon juice 1/2 tsp dry mustard Old Bay Seasoning to taste (available in most supermarkets), 3 TBL chopped parsley 2 TBL sherry 1 pound lump crab meat. Directions: In a large microwavable bowl, melt butter. In a separate bowl, beat yolks, whipping cream, lemon juice, mustard and Old Bay. Stir this mixture into butter. Microwave uncovered on high for about 3 minutes, stirring once. Continue heating until mixture is consistency of hollandaise sauce. Fold in parsley, sherry and crab. Divide mixture among 4 scallop dishes and broil until lightly browned. Asparagus and crusty bread are great side dishes.
