Crepes With Sherry Cheese Sauce
Ingredients:
Crepes: 1 cup milk, 4 eggs, 1 cup all-purpose flour, 1/2 tsp. salt, 2 Tbl.melted butter. Sauce: 3 Tbl. butter, 3 Tbl. all-purpose flour, 1 1/4 cups warm milk, 1 cup grated sharp cheddar cheese, pinch of dry mustard, 1/4 cup sherry. Additional: 12 eggs scrambled. Directions: Blend crepe ingredients in blender for 30 seconds and let stand for 30 minutes. Preheat small non stick pan until very hot. Pour 1/4 cup mixture into pan tilting pan until batter covers bottom. Cook for 30 seconds until browned, flip and cook for 20 seconds. Turn out onto wax paper. For sauce, melt butter in saucepan over low heat; add flour. Cook for 2 minutes. Add warm milk and stir for 1 minute. Add remaining ingredients.
