Day Old Biscuits
Filed under: Breakfast, Breakfast - French Toast.
Description: A fun name for a seriously delicious dish. We make this using fresh Palaside Peaches grown exclusively in Palaside Colorado. Make this the night before and enjoy an easy morning! Other fruit can be substituted, but Palaside peaches put it over the top. Ingredients: 6-8 day old buttermilk biscuits 2-3 Palaside Peaches 1/2 pint of fresh blueberries 5 eggs 2 cups of milk 2 cups of heavy cream 1/3 cup of maple syrup 2 teaspoons of pumpkin pie spice 2 tbsp brown sugar divided 1-2 tbsp. butter 1 8 ounce tub of whipped cream cheese or sour cream Directions: Melt butter in a 9 x 13 baking dish and brush bottom and up the sides, set aside. Whisk 4 eggs, milk, cream, syrup, spice and one tbsp of brown sugar until bubbly and set aside. Split half of the biscuits and place in buttered dish with top/bottom side down. Crumble up a biscuit to fill in any gaps. Pour half of the egg and milk mixture over biscuits and let set for about 10 minutes. Peel and slice peaches. Whisk cream cheese (or sour cream) and remaining egg together until smooth. Spread mixture over biscuits and layer with peaches being sure to overlap, sprinkle with blueberries. Crumble remaining biscuits on top. Pour remaining milk and egg mixture slowly over top, sprinkle with brown sugar and a shake or two of pumpkin pie spice. Cover and refrigerate overnight. Bring to room temperature before baking. Bake uncovered at 375 for 45 minutes to 1 hour until set and golden brown. Let cool for 5-10 minutes before serving. Sprinkle with powdered sugar and serve with real maple syrup. Recipe Summary: Yield: 6/8 servings Prep Time: 15 minutes Cook Time: 45 minutes-1 hour Comments: |
