Description:
Old World-style baked pancake, wonderful plain or with fruit. Let your imagination be your guide. Ingredients: 4 eggs 2 Tbl. sugar 2 1/2 cups milk (or 2 cups milk and 1/2 cup orange juice) 1/4 tsp. salt 1 tsp. almond extract or vanilla butter & nut flavor (omit when using orange juice) 2 cups flour 2 Tbl. melted butter Directions: Preheat oven to 375˚. Grease 9 x 13” baking dish. In mixing bowl, beat eggs. Add sugar, milk, salt, and almond extract; mix well. Stir in flour and melted butter. Pour batter into greased baking dish. Bake for 35 - 45 minutes until edges have risen and are golden brown and center is set. To serve, top each slice with a strawberry and dust with confectioners’ sugar. Variation: Omit flavoring and add 1 – 1 1/2 cups fresh or frozen berries, sliced apples or pears just before baking.
