English & Bacon Strata
Description:
A delicious strata-style casserole made with english muffins, eggs, and cheese. It's hearty, flavorful, and very popular with my guests and family. I have a small (single cabin) Bed & Breakfast so this version makes one bread-pan strata; easily doubled Ingredients: Softened butter for pan 2 english muffins, split, toasted, cut in half 6 slices of bacon, cooked and crumbled 3/4 cup extra-sharp cheddar cheese, shredded 1/4 cup parmesan cheese, finely shredded 4 eggs 1 1/2 cups milk or use half & half for extra-creamy texture 1 tbsp dijon mustard Salt & pepper, up to 1/2 tsp each, to taste 1/2 tsp Tabasco sauce Directions: Butter a glass loaf pan or 1-quart baking dish. In the dish, lay 1/2 the english muffins, split side down. Layer 1/2 the crumbled bacon on top. Repeat layers. Sprinkle with the cheeses. Set aside. In a large bowl, whisk together eggs, milk, mustard, salt, pepper and Tabasco until combined. Pour over muffin layers. Cover tightly and refrigerate at least two hours, or overnight for extra-custardy consistency. Preheat oven to 350?. Place uncovered baking dish on a rimmed baking sheet. Bake until puffed and set in the center (a paring knife inserted in center should come out clean), about 70 minutes. Tent loosely with foil if strata starts to brown too quickly. Let stand 10 minutes before cutting and serving.
