Fiesta Omelet
Description:
This quick to assemble egg dish is a delight for guests of all ages. Ingredients: 6 eggs 1/2 cup low fat cottage cheese 1/2 cup sour cream 1/2 cup mild salsa Dash of Cumin Dash of Garlic Powder 1 cup shredded Monterey Jack cheese 1 cup shredded Cheddar cheese (+ Kraft Taco/Mexican Flavored Shredded Cheese for topping) Directions: Spray a 9-inch pie pan with nonstick cooking spray. Whip together the eggs, cottage cheese, and sour cream, cumin & garlic powder in a medium bowl. Spread the salsa over the bottom of the pie pan, and sprinkle the cheeses over the salsa. Pour the egg mixture over the cheese. Bake in a 350 degree oven for 45 minutes. During the last 5 minutes of baking, sprinkle the Kraft Taco/Mexican flavored cheese on top.
