Fluffy Rice With Chicken, Tomatoes & Onions

Description: A chicken/rice casserole using home-grown tomatoes and onions served with Williams-Sonoma Mini-plain croissants. Ingredients: 2 chicken breasts 2 cups water 2 home-grown tomatoes 1 medium home-grown onion 1 cup rice Directions: Cook chicken breasts in water. When tender, cut into bite-size pieces. Set aside. Cut tomatoes into bite size pieces and set aside. Chop onion fine and set aside. Strain chicken water and add rice and pinch of salt and bring to a boil. Turn down heat, put lid on pan and simmer for 14 minutes until water is absorbed. Remove rice from heat and put 3 layers of paper towel over pan and replace lid. Let set for 10 minutes. Any remaining moisture will be absorbed by the paper towel to produce fluffy rice that won't be mushy. Add chicken, tomatoes and onions to the rice and season to taste with choice of spices.
