French Toast Souffle

Description: A super easy and attractive dish that can be prepared the night before Ingredients: 4 eggs 1/3 cup milk 1/4 teaspoon baking powder 1/4 teaspoon vanilla extract 4 slices day-old white bread, crusts removed and cut into cubes 10-12 chocolate chips Powdered sugar or cinnamon sugar for garnish Accompaniments: Warm syrup Directions: Spray 2 heart-shaped ramekins with non-stick cooking spray. Pack the bread cubes into the ramekins and place 5-6 chocolate chips among the bread cubes. Beat together the eggs, milk, vanilla extract and baking powder. Pour the egg mixture over the bread, ensuring the bread is well soaked and to the top of the ramekins. (If preparing the night before, reserve any extra egg mixture to "top up" the next day.) Place on a baking sheet and bake at 450 degrees for approximately 25 minutes, until golden brown and puffed. Working quickly, remove the souffle from the oven, sprinkle with powdered sugar and serve with bacon, fruit garnish and with warm syrup on the side.
