Fresh Baked Oysters With Spinach And Fresh Herbs

Ingredients: 12 very fresh oysters 2 bunches of spinach, cleaned, chopped and drained 3 cloves garlic, minced 1 cup bread crumbs 1 cup Parmesan cheese, grated 2 cups rock salt 1/2 cup fresh basil, chopped 1 Tablespoon fresh thyme, chopped 1/4 cup fresh parsley, chopped 1 yellow onion, chopped 1 cube unsalted butter Salt and pepper, to taste Directions: Place oysters on a baking sheet in a 350 degrees oven until they just begin to open. Shuck the oysters, leaving them in the half shell. Saute the onion and garlic in butter until translucent. Add basil, thyme, and parsley. Saute lightly. Squeeze all excess moisture from the spinach and add to the saute mixture briefly. Remove from the heat and place mixture into a food processor. Process until evenly minced. Do not puree Empty the mixture into a bowl. Stir in the bread crumbs and add salt and pepper. Spread rock salt on a baking sheet and place oysters on top. Cover each oyster with a dollop of spinach mixture and a sprinkle of grated Parmesan. Bake at 350 degrees for 15 to 20 minutes.
