Gillum House Rolls
Description:
This is wonderful for working women to have hot homemade rolls for dinner all week as long as the towel is kept damp - mixed up on her day off. Quick and easy. Ingredients: 2 packages dry yeast or 2 tablespoons bulk dry yeast 2 cups very warm water (hot from tap is fine) 1/2 cup sugar 1/4 cup unsweetened applesauce 2 egg whites 6 1/2 to 7 cups all-purpose flour Directions: Put very warm water in a large bowl. Sprinkle yeast over water and add sugar. “Proof” yeast (leave it for about 5 minutes – if yeast clumps proceed, if not toss out & start over). Add applesauce and egg whites. Stir. Add flour until dough is stiff. Cover bowl with waxed paper and damp (not wet) towel. Put in refrigerator. 1 hour before baking, spray muffin pans with non-stick spray, shape rolls (1 golf-ball size ball or 3 walnut-size balls per muffin cup), cover with towel to raise. Put remaining dough back in refrigerator covered by waxed paper and damp towel. Dough keeps up to 4 days if towel is kept damp. Preheat oven to 400 degrees. Bake 15 minutes (nicely browned). Lightly butter tops of rolls and serve.
