Gingerbread Scones

Gingerbread Scones

2 cups flour
1/3 c sugar
I tsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 c butter
2/3 c milk
I egg, beaten
I tsp vanilla
I teaspoon ginger
2-tsp molasses

Heat oven to 400 degrees F. Combine flour, ginger, sugar, baking powder, cinnamon and salt. Using pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Combine milk, egg, molasses, and vanilla. Add to flour mixture; stir until dry ingredients are moistened. With floured hands, shape dough into 8-inch round on un-greased cookie sheet. Sprinkle with additional sugar, if desired. Cut dough into 8 wedges; slightly separate wedges. Bake at 400 degrees for 15 to 20 minutes. Serve warm Makes 8 servings.
