Chunky cookies filled with nuts, raisins and coconut Ingredients: 3/4 cups salted butter softened 2 cups packed brown sugar 1 tsp baking soda 1 egg 1 tsp vanilla 1 cup flour 3 cups oats 3/4 cups raisins 2/3 cup pepinos 1/2 cup sunflower seeds 3/4 cups coconut 3/4 cups pecan chunks Directions: Blend first 5 ingrdiant until light and fluffy, incorporate flour. Add everything else but the oats, mix in and the slowly add the oats. If too dry add 1/4 cups water. I always try a cookie before scooping to see if extra flour is needed. They need to bake for about 10 minutes at 350.If they bake good make into 1" balls and press down to 1/2" high. Bake as many as you can eat and freeze the rest of the dough unbaked.
