Guests love the crunchy granola which is a great start for a day of bicycling on the Elroy-Sparta Trail, Nordic Skiing or disc golfing. Granola is a great snack. Add some M & M's for a great trail mix. Vary the kind of nuts keeping the proportion. Ingredients: 1 cup vegetable oil 1 cup honey 1 cup sorghum syrup 1 cup peanut butter 1 tablespoon ground cinnamon 1 tablespoon ground nutmeg 1 tablespoon ground ginger 1 tablespoon salt 48 oz. box old fashioned oats 2 cups sunflower seeds 1 cup coconut flakes 1 cup pumpkin seeds 2 cups ground, chopped or slivered almonds 2 cups craisins (dried cranberries) 1 cup dried pineapple 1 cup dried papaya Directions: In a glass measuring bowl, add oil, honey, sorghum syrup, & peanut butter. Heat until peanut butter liquefies. Add spices, stir together. In a very large bowl add all dry ingredients. Pour liquid over dry ingredients. Mix until all are moist. Pour into 3- 11 x 15 brownie pans. Bake at 325 for 10 minutes. Stir. Return to oven for another 10 minutes until golden brown. Stir while cooling to create a crunchy granola. No stirring makes clumps. Add dried fruit after baking. Stir to mix in the fruit. Serve with yogurt and fresh fruit or fruit sauce such as apple or rhubarb. Store in a air tight container.
