Ham & Potato Bake

Scrumptious ham, cheese & potato casserole. Made with eggbeaters to minimize the fat. 2 color peppers and minced onion. Bisquick, low fat milk! Yum!

1 to 2 cups chopped ham
1 cup mixed chopped bell peppers (can do frozen)
1 Tbls dried minced onion
4 potato patties crumbled (can use any frozen type)
2 cups shredded cheddar cheese divided
1 cup Bisquick
2 & 1/2 cups low fat milk
4 eggs (can use eggbeaters)
1 tsp salt

Mix ham, potatoes, bell peppers, onion & 1 cup cheese. Spread in the bottom of a greased (use spam) 13 x 9 glass casserole dish.
In a separate bowl, Mix eggs, milk salt & bisquick until well blended. Pour this mixture over ham mixture.
Sprinkle with remaining cheese. Sprinkle with parsley.
Bake at a 375 oven for 42 minutes. Let cool for 15 minutes before serving or refrigerate, covered, overnight, and reheat & serve in the morning. (That's the best way?
