Layered Egg Casserole

Excellent egg dish to serve a group for brunch.

1 C. sliced mushrooms
1/3 C. diced onions
4 Tbl. butter
1 can cream of mushroom soup
1 Tbl. milk
1 Tbl. Marsala wine
1 C. cheddar and 1 C. Monterrey jack/jalapaeno cheese.
18 eggs
Dash of parsley

Saute mushrooms and onions in butter.
In a second skillet heat soup, milk and wine.
Shred cheeses. Beat 18 eggs, dash of parsley, black pepper and dill weed. Pour into mushroom/onion mixture. Cook 2/3 of the way.
Layer a 8 1/2 x 11" casserole dish with 1/2 of the egg mixture, 1/2 of the soup mixture and 1/2 of the cheese. Repeat layers and sprinkle top with paprika. Bake at 300 for 35 minutes. Serves 12.
