Lemon Poppy Seed Bread

A wonderful sweet lemon bread covered with a tart lemon glaze. Perfect with a cup of coffee or tea.

2 eggs
1 1/2 cups milk
1 1/8 cups oil
1 1/2 teaspoon vanilla
1 1/2 teaspoon almond or lemon extract
3 cups flour
2 1/2 cups sugar
1 1/2 teaspoon salt
1 1/2 teaspoon baking powder
1 1/2 Poppy Seed
1/4 orange juice
3/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon butter
1 tablespoon of lemon juice from a real lemon

Beat eggs and add all the other wet ingredients.
Mix together all dry ingredients.
Add the wet to dry ingredients along with the Poppy seeds.
Mix together. Grease or spray small bread tins.
You can also use muffin tins and make muffins.
Add mixture to your choice of tins.
While baking mix together the glaze ingredients in a pan and cook on the stove top bringing it to a boil. Remove and pour over bread/muffins when you pull them out of the oven while still hot.
When bread/muffins are cool, release them onto your serving plate. You may also freeze to use at a later date.

Cook Time: 20 minutes for small bread tins - 10-12 minutes for muffins. Always check with a toothpick .
