Literary & Jocular Society Frittata

Egg and Cheese Fritiata

1 tsp olive oil
1 Tbsp butter
1/4 pound fresh mushrooms (any variety)
3 eggs
1/2 cup mayonnaise
1/2 cup milk
1 1/2 Tbsp all purpose flour
3 Tbsp minced shallots
1 14 oz can artichokes in water, drained & sliced thin
1/2 tsp herbs de Provence
1 cup shredded Swiss cheese
1 cup shredded Monterey jack cheese

Preheat oven to 350. Grease 9" pie plate with olive oil. In a medium skillet melt butter & saute mushrooms. Meanwhile, beat eggs, mayonnaise & milk. Blend in flour and shallots. Set aside.
Place artichoke slices in pie plate, top with with mushrooms. Sprinkle cheeses over the top. Pour milk mixture over the top of cheese.
