Luscious Lemon Cupcakes

This is a very moist and refreshing lemon cake that I like to serve as glazed cupcakes.

1 box lemon cake mix
1 small package lemon Jello
1 cup buttermilk (Bulgarian style works best)
1/2 cup vegetable oil
4 eggs

2 cups confectioners sugar
2 tablespoons butter
1 tablespoon lemon juice

Heat oven to 350 degrees. Spray pan with baking spray with flour.
Beat cake ingredients with mixer on low speed for 30 seconds and then on medium speed for 2 minutes.
Divide mixture evenly among 24 cupcake cups.
Bake for between 18 to 21 minutes.
Let cool for 10 minutes then remove from pan.
Combine the ingredients for your glaze in a medium size bowl and then dip the tops of your cupcakes into the glaze & invert onto your serving platter so that the glaze runs down the sides. If the glaze seems too thick you can add a little milk to it to make it thinner
