Luscious Lemon Cupcakes
Description:
This is a very moist and refreshing lemon cake that I like to serve as glazed cupcakes. Ingredients: 1 box lemon cake mix 1 small package lemon Jello 1 cup buttermilk (Bulgarian style works best) 1/2 cup vegetable oil 4 eggs Glaze: 2 cups confectioners sugar 2 tablespoons butter 1 tablespoon lemon juice Directions: Heat oven to 350 degrees. Spray pan with baking spray with flour. Beat cake ingredients with mixer on low speed for 30 seconds and then on medium speed for 2 minutes. Divide mixture evenly among 24 cupcake cups. Bake for between 18 to 21 minutes. Let cool for 10 minutes then remove from pan. Combine the ingredients for your glaze in a medium size bowl and then dip the tops of your cupcakes into the glaze & invert onto your serving platter so that the glaze runs down the sides.
