Maine Crabmeat Breakfast Quiche

Delicious crabmeat quiche is as delicious as crab cakes but easier to do, can be prepped the night before and then baked fresh the next morning!

1 bunch chopped Organic scallions
1 large chopped Organic red pepper
6 ounces crabmeat
1 cup grated Organic Swiss cheese
1 cup grated Organic cheddar cheese
8 large local Organic eggs
2 cups Organic half-and-half
1 teaspoon sea salt
1/2 teaspoon freshly-ground black pepper
1 cup fresh bread crumbs

Butter a quiche pan.

Beat eggs then mix all remaining ingredients together and add to eggs.

Pour into pan and bake at 350 until set (about 35-45 minutes) and lightly browned on top.

Cut into pie-shaped pieces and serve hot.

Good served with broiled tomatoes halves in the winter or just good sliced tomatoes in the summer. Add hearty farmer type bread, some organic butter and a tart jam or jelly to round out the presentation of the plate. Garnish with some of the chopped green scallion parts or fresh parsley.
