Mama's Melt In Your Mouth Sweet Rolls

Description: This recipe also makes wonderful Parker House rolls. Dip in butter after folding before placing on pan to rise. Thanks to my friend Maxine Bumstead for sharing this recipe with me. Dinner guests at the ranch never fail to ask for the recipe for these roll Ingredients: Makes 3-4 dozen 1 cup boiling water 1 cup shortening 1 cup sugar 1 1/2 tsp. salt 2 eggs 4-1/2 tsp. dry yeast 1 cup water, slightly warm 6 cups (+ or -) flour 1/2 cup butter 1/2 cup brown sugar 1 Tbsp. white sugar 2 tsp. cinnamon 1 tsp. vanilla extract Directions: Melt shortening in 1 cup boiling water. Add sugar and salt and let cool a bit. Put yeast in the 1-cup slightly warm water and let sit for 5 minutes. Add the shortening mixture to the eggs, a little at a time. Add water with yeast and then flour, one cup at a time. Blend well (batter will be slightly sticky), cover with a damp cloth and refrigerate for up to 3 days. When ready to assemble rolls, roll out the dough on a floured board. Spread with butter, then brown sugar, white sugar, cinnamon and vanilla. Roll up tightly in jellyroll fashion and cut in 1" slices. Place on buttered cookie sheets or pie pans. Let rise again for 1-2 hours (or can refrigerate again for 1-2 days and then let rise). Bake at 350 for about 20 minutes. Spread with icing made with powdered sugar, butter, vanilla and a bit of orange juice or Triple Sec liquor.
