Mediterranean Crustless QuicheDescription: Flavorful and relatively carb-free because there's no crust! You also can substitute alternative flours to make this quiche gluten-free. Ingredients: 6 large eggs 1/4 cup all-purpose flour pinch of salt and pepper 1/2 teaspoon baking powder 1 cup cottage cheese 1.5 cups shredded cheese 1/2 cup feta cheese 2-3 TBS butter, melted I cup chopped artichoke hearts 1/4 cup sliced Kalamata olives 1/8 cup diced sundried tomatoes 1 tsp oregano Directions: Spray 9-inch glass pie plate with nonstick cooking spray. 8- or 9-inch square pan works well too. Spread artichokes, olives, tomatoes, and feta, evenly on bottom of pan. Sprinkle oregano over top. In large bowl, beat eggs until smooth. Add flour, baking powder, salt, and pepper and mix well. The batter will be lumpy. Stir in the cheeses and melted butter; mix well. Pour into the prepared pan. (You can cover and refrigerate overnight or bake immediately.) Next day: take pan out of fridge 20 minutes prior to baking. Optional: lay tomato or pepper slices on top. Preheat oven to 350. Bake until top just starts to turn golden brown -- 35-40 minutes.
