Description: No exaggeration, this is THE best banana bread I've ever had. The loaves will have a slightly crunchy top and the bottom will be moist. And, of course, yummy! Ingredients: 2 ripe bananas, mashed 2 eggs 1 3/4 cups sifted flour 1 1/2 cups sugar 1/2 cup oil 1/4 cup milk plus 1 Tablespoon of milk 1 Tablespoon lemon juice 1 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon vanilla extract walnuts are optional - just stir in 1/2 cup after blending the batter together Directions: Preheat oven to 325. Mash up the bananas in a mixing bowl. Sift together the dry ingredients -- then add all the ingredients, both wet and dry, to the bananas at once and just mix gently until blended together . Pour into well- greased pans. Baking time depends on the pans. Be sure to bake slowly. My sister has these neat little mini loaf pans that are my favorite. If I use those pans, I divide the batter into three pans. Takes about 40 minutes to bake if divided into threes If you put all the batter in one big loaf pan, it can take up to one hour and 20 minutes to bake. The loaves should have a nice golden color and a rounded rise. Use a toothpick to test the center if you're not sure.
