Orange-cranberry SconesIngredients: 1 3/4 c flour 2 t baking powder 2 T sugar 1 t salt 1/2 c (1 stick) cold butter 1/2 c dried cranberries (craisins) zest of 1 orange 3/4 c whole milk crystal sugar (optional) Directions: Preheat the oven to 375˚. In a bowl whisk the flour, baking powder, sugar and salt together. With a sharp knife cut the butter into small pieces into the bowl of dry ingredients. Press the butter into the dry ingredients with your fingers until the lumps have disappeared. It should take about a minute and a half or so. Do not overwork the batter. Add the orange zest and cranberries. Toss lightly. Add the milk. Using a spatula, form the dough. Dump the dough onto a heavily buttered cookie sheet. Pat the dough down until it forms an 8-inch round. Cut the dough into 8 wedges. Gently separate the slices until they are about an inch apart. Sprinkle with the crystal sugar if desired.
