Our Special Omelet
Description:
Omelet with Caramelized Onions, Shitake Mushrooms and Gorgonzola Cheese Ingredients: 1/2 T olive oil 1/2 T butter + 1/2 T butter 2 extra-large eggs 1 medium onion chopped 1-2 oz. shitake mushrooms chopped 3 oz. crumbled gorgonzola cheese dash Worcestershire sauce s&p to taste chopped chive or paprika (optional) Directions: Prepare filling: Put olive oil and 1/2 T butter in non-stick frying pan over moderate heat until bubbly, add chopped onion and shitake mushrooms and toss. Cook over low heat for approximately 45 minutes, tossing every 15 minutes, until onion-mushroom mixture is greatly reduced and a deep rich caramel color. The filling may be made ahead and refrigerated overnight. Prepare omelet: Whisk 2 eggs thoroughly with touches of salt, pepper and Worcester sauce. In an omelet pan with lid, heat 1/2 T butter over medium heat. Pour in egg mixture, reduce heat to low and let set for 1 minute until egg is slightly cooked. Spoon a line of the onion-mushroom mixture down the center. Top with gorgonzola. Cover. As egg mixture cooks, run rubber spatula around edge of pan, tilting it to let runny mixture resettle at edges. When egg is almost cooked, lift one side of the egg over the onion-cheese center, then lift over the other side. Carefully turn omelet over, seam-side down. For moister interior, cook 1 minute more on low heat, for firmer interior cook 2-3 minutes more. Sprinkle with chopped chive or paprika.
