Poached Pears With Raspberry Sauce

Pretty and delicious! The poached pears and sauce should be made the night before. Serves 8 Ingredients: 8 ripe pears 6 to 8 cups of water 2 tablespoons of lemon joice One cup of frozen raspberries 1/2 cup of orange juice 1/2 cup of confectionary sugar Directions: Peel the pears leaving the stem on top. Slice off a small section on the bottom of the pear so it will stand up. Put the pears in a large saucepan and cover with water and add the lemon juice. Bring to a boil and simmer for 15 minutes. Remove and set the pears in a glass baking dish. Cover them with plastic wrap and refrigerate overnight. To make the sauce, in a food processor or blender place the raspberries, orange juice and confectionary sugar. Blend. Refrigerate overnight in a small pitcher. In the morning, assemble each pear in a glass dish or ramekin, pour the raspberry sauce over and serve.
