Rachael's Fruit StrataDescription: Using seasonal fruits allows you variety at different times of the year. Using different breads also allows for more creativity. The dish combines fruit, eggs, cream and bread to provide a delicious full breakfast. Ingredients: Local and fresh ingredients. Equivalent of one loaf of bread. 8 oz. cream cheese. 1-2 firm round fruits, peaches, pears, plums, apples or apricots. 8 eggs, 2 1/2 C. cream, 6 Tbsp. butter, 1/4 C. fresh maple syrup and 1/8 tsp. vanilla. Directions: Grease a 9x13" glass baking pan. Cut 1/2" slices of muffins, quick bread or raisin bread and spread with cream cheese. Use these to cover the bottom of the pan. Cut thin slices of your local in season fruit, peaches, pears, plums, apples or apricots. Create a batter with 8 eggs, 2 1/2 C. cream, 6 Tbsp. melted butter, 1/4 C. real maple syrup & 1/8 tsp. vanilla. Slowly pour this over the bread, cream cheese and fruit. Refrigerate.
