Raspberry Cream Cheese Stuffed French Toast

A house favorite, perfect for a decadent Sunday morning.

16 oz. Cream Cheese, softened
36 slices Thomas English Muffin Bread
1 Bag frozen raspberries
9 eggs, beaten
2 1/4 cups Half and Half
9 Tbsps. sugar
1 1/2 tsp. Vanilla extract
2 Tsps. Salt

1. Spread cream cheese evenly over one side of each slice of bread.
2. top half of slices of bread with raspberries. Top with remaining bread slices, cream cheese side down, to make sandwiches.
3. Combine eggs, half and half, sugar, vanilla and salt in a bowl.
4. Dip each sandwich in the egg mixture, turning carefully to coat both sides.
5. Cook on the griddle until egg is cooked and French Toast is golden brown.
6. Serve with warmed maple syrup, fresh raspberries, whipped cream and mint.
