Ray's Fabulous Scones

Large plump moist scones.

2 cups flour
3Tbsp sugar
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup shortening (butter or margarine)
3/4 cup orange juice or milk
1 egg
1/2 cup dried fruit, chocolate chips, fresh berries*
1/4 cup fine chopped nuts (pecans, walnuts)
Zest of orange (optional)
*when using fresh fruit, such as pineapple, cut back on juice or liquid by a couple Tbsp. This would not include blueberries.

Mix all dry ingredients, including zest of orange, nuts and dried fruit
Cut shortening into dry ingredients
Add orange juice and egg
Do not over mix, batter may be somewhat lumpy
Drop by heaping tablespoons on ungreased cookie sheet
