Rhubarb Bread

3/4 cup granulated sugar
3/4 cup brown sugar
2/3 cup oil
1 egg
3 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 cup sour cream
1 tsp vanilla
2 cups diced rhubarb
1/2 cup chopped pecans

1/2 cup brown sugar
1/2 tsp. cinnamon
1-2 tbs butter

Mix together sugars, oil and egg. Sift together flour, soda and salt in a separate bowl. Combine sour cream and vanilla. Alternately add dry ingredients and sour cream mixture to sugar mixture. Blend in rhubarb and nuts. Pour into greased and floured bundt pan, or 2 bread pans. Sprinkle with topping.


Combine brown sugar, cinnamon and butter into fine crumbs:

Bake 350 degrees F., 55-60 minutes. Cool 10 minutes before removing from pan. slice and serve.
