Rhubarb Brown Sugar Muffins

A tasty, easy to make breakfast or anytime muffin. Good served warm or room temperature; served plain or with cream cheese. These freeze well.

1-1/2 cups brown sugar
1-cup buttermilk
2/3 cup vegetable oil
2 eggs
2 teaspoons vanilla
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 cups diced rhubarb, fresh or frozen
1/2 c finely chopped black or regular walnuts.
Topping Ingredients:
1/2 cup brown sugar
1/4 cup chopped nuts
1 teaspoon ground cinnamon

Preheat oven to 375 degrees. In a small bowl mix sugar, eggs, vanilla, oil & buttermilk. In medium bowl, mix flour, baking soda & salt. Stir sugar mixture into flour mixture, blending only until evenly moistened. Stir in rhubarb & nuts. Spoon into well-greased or papered cupcake pans.
Stir together topping ingredients & sprinkle evenly of the top of each muffin.
Bake about 20 minutes, or until center springs when touched.
