Roast Garlic Crusted Beef Tenderloin

Description:
This easy and elegant beef tenderloin recipe wins raves from our wedding guests every time. BJs and Costco have excellent whole beef tenderloins. Be sure to completely trim the membranes off the tenderloins before coating.

Ingredients:
1 whole beef tenderloin
1 c. fresh bread crumbs
6 whole cloves garlic
1 TBSP salt
1 TBSP pepper
1 tsp. ancho chili powder
1/4 c. Dijon mustard

Directions:
Preheat oven to 500 degrees. Add the garlic, salt, pepper, and chili powder to the fresh breadcrumbs in a food processor. Process until garlic is finely ground. Trim the fat and membranes off of the beef tenderloin. Brush the tenderloin with Dijon mustard until thinly coated. Sprinkle with breadcrumb mixture and pat lightly onto the tenderloin. Put tenderloin in roasting pan and roast at 500 degrees for 15 minutes. Turn oven down to 400 degrees and roast for 25 more minutes. Test temperature with internal instant read thermometer. When temperature in thickest part of roast reaches 125-130 degrees, remove roast from oven. Let sit at room temperature for 15 minutes and then carve for serving.
